A Story of Grain + Dairy Free Transformation:

Finding Freedom From Anxiety Through Nutrition

The first time I experienced anxiety I was 22 years old.

My father had recently been diagnosed with cancer, I had moved into a new place, was enrolled in an undergraduate degree program, and was teaching at a K-12 charter school.

Life felt uneasy and intimidating—every single day. Shortly after my father passed I started having panic attacks. I refused to go to a doctor because I feared they would try to force prescriptions on me.

I was determined to face my anxiety, and work through my symptoms without the help of medication.

I was never officially diagnosed, as I refused to seek out help. As an avid researcher, I had read enough to understand that what I was suffering from was anxiety.

I fell into that category with so many others who never seek treatment and go undiagnosed. Anxiety disorders plague western society; you most certainly know people in your life that live with symptoms everyday (and maybe that includes you).

After a couple of years of moving through my grieving process, I was able to successfully reduce my my anxietyuntil, that is, I found myself in another new chapter.

I was, once again faced with a lot of uncertainty: another new place, a toxic relationship, and a new career path with my own business.

My anxiety took over once again, causing my sympathetic nervous system to go into overdrive—eventually leading to adrenal fatigue.

Even after doing an overhaul on my high stress lifestyle, I was still experiencing anxiety from the enduring havoc the stress had caused to my physical and mental state.

I spent months trying to reduce it—focusing on building a lifestyle focused on self-love, health and wellness, and was able to start reducing my symptoms. But traces of my daily anxiety still lingered.

At this point, I had been practicing Buti Yoga for a year and a half. I had witnessed many women have remarkable transformations going Grain Free/Dairy Free—however, as someone who doesn’t suffer from any autoimmune disorders or GI related issues, I didn't expect to see any results from going Grain Free/Dairy Free myself.

Having been a Pescatarian for 8 years—I was used to avoiding certain foods. Instead of looking at Grain/Dairy free as a limiting factor  I decided to view it as an opportunity to experiment. I had already experienced years of scrutiny for having dietary preferences, but knew how to confidently stick to them if they truly made me feel my best.

For the first few days, I experienced a few minor withdrawals from grains and dairy—along with headaches and cravings.

Fortunately, those soon passed and I started to notice positive changes: my skin began improving after just a few weeks. The positive changes kept coming.

After a couple of months of eating this way, I realized that my anxiety was at an all time low. I had started making life decisions NOT based on fear or uncertainty but with a new found ease (with additional help from Bizzie’s BREAK method).

I had never considered that nutrition could be a contributing factor to anxiety disorders, let alone the final piece of the puzzle in eliminating my anxiety.

It turns out that anxiety and gut health go hand in hand, because gut health and brain health go hand in hand.

While you may not experience any physical symptoms of an unhealthy gut, mental symptoms like anxiety and depression may indicate that your gut is not as healthy as you think.

It took 5 years to discover, but I finally feel like I have the final tools to eliminate anxiety from my life. I have no desire to welcome grains and dairy back into my life, because I know anxiety is the side effect that comes with them.

If you suffer from anxiety, and want to regain control over your life, I highly encourage you to give the Grain Free/Dairy Free lifestyle a solid chance.

Nutrition is not a cure, but it is a tool. Combined with a lifestyle of exercise, yoga, meditation, sleep and stress management—you might have found your key to naturally decreasing your anxiety, too.

Editors Note:  Our 30 Day Slimdown Meal Plans are the easiest (and most delicious) way to transition to a grain + dairy free lifestyle and THRIVE.

A Grounded Spirituality Check-In:

I know what you’re thinking:

“WTF did I just click on? Is this some kind of weird hippie-dippy woo woo?”

Don’t worry—the answer to that is NO.

This is not Hogwarts and you are not on platform “9 and ¾”.

This is not magic.

This is not “heady” philosophy.

This is not religion.

(Although, it certainly can relate and serve as compliment to any/all of the three- but only if you want to make the relationship and correlation.)

One of the core belief values within the Butisattva community is that

you can truly only be as spiritual as you are grounded.

We call this Practical Spirituality:

The belief that in order for us to fully and authentically embody anything “spiritual”, we must simply define and evaluate “spirituality” as energetic awareness.

The fundamental rule of quantum physics is that everything is Energy. So, no, we’re not talking hippie dippie woo-woo.  We’re talking science.

It’s only from this rooted place and perspective that we can start evaluating our own energy (micro level) as well as the energy around us (macro level).

This is authentic, grounded, and embodied spirituality.

The Buti Tribe has tools available to us to help us realign and center our own energetic bodies on the micro level.

From the practice itself, to clean eating guidelines, to chakra diagnostics and the BREAK method, these energetic “hacks” allow transformational development to occur within us.

This is where it all begins—but certainly not where it ends.

We also have to pay attention to what’s going on around us.

Micro & Macro make the mix.

When we “feel” mercury retrograde, or sense that “something is up in the stars”, it’s simply us perceiving energetic flux within our ecosystem.

I hate to break it to anyone who thought they had been gifted a sixth sense: intuition is really just the ability to tune in and focus on energy. This “superpower” is accessible to anyone, so long as they’re paying attention to it.

So back to this portal.

Let’s just say it: cosmic shi(f)t is too real and too gnarly right now.
If you’ve been feeling out of sorts, all kinds of crazy, and like the apocalypse is upon you, don’t panic. Rest assured that you are fine, well, and not alone. I repeat: Nothing is wrong.

What “it” Is:

It’s more than just mercury going retrograde or planetary shifts. We have reached a very special and interesting conjunction both astrological and karmic in nature that allows us, as a collective, to have a full system reboot.

What does that mean?

Simply put: If life is a computer, we’ve reached system overload and are hitting the restart button. It’s time to clean up the hard drive, debug any virus infected software, and make our “desktop” look pretty so we can run clean and new at optimal efficiency.

Okay, but—Portal?

This is a long restart and reboot.

To be specific:

The “restart” button was pushed down starting on September 1st with the Solar Eclipse. The buildup has been a long time coming, but this was the first actionable transition step. The pressure won’t be let off of the “restart” button until right around/on September 9th.

“Reboot” will follow right after for about one week, until the lunar eclipse on September 16th.

Hence the “portal”: a window of time in which we are having a huge and monumental reset.

How Does This Affect Me & What Do I Need to Do?

Energy affects everyone differently, but here are some of the common symptoms being picked up on:

In general, expect WEIRD to happen:

  • Emotions on high
  • Lack of energy/ extreme fatigue/ restlessness
  • Feelings of being somehow “lost”
  • Weird flashbacks to childhood
  • Dreams that don't make sense and aren't logical
  • Physical symptoms of dizziness or nausea

Also, due to the retrograde, expect lots of “going backward to move forward”.

People and situations from your past may come up. Take careful time and consideration in these circumstances, and look at them as opportunities for growth and/or a second chance.

Don’t panic or freak out.

Without knowing it, you are in the perfect place and exactly where you need to be to move on from this moment. The future is actually limitless. You are being given a clean slate to make or create however you wish to.

Do I Have to Do Anything?

DUH. As always, it’s your responsibility to take on an active role in your life. During this sensitive time, this role comes in the form of

EVALUATION & ACTION: It's time to step back and take a look at what you’ve been going through and got going on.

Shed off anything and everything that doesn't serve your highest self. Pay attention and use your tools. Take things being perceived as negatives and "no's" not as disasters, but as arrows pointing you down the yellow brick road in the right direction. Focus on what you like, what’s working, and what makes you feel good. Figure out and envision how you plan to move forward nourishing those things.

This is an exciting opportunity to step into new territory and let go of any baggage and weight you don’t want to take with you.

Tools to Leverage:

  • Buti Yoga
  • The BREAK method
  • Chakra alignment/ check in
  • Rest. Recovery.
  • Nourishment in the form of all kinds of self-love.

When Is This Sh*t Over?

Mercury goes direct between the 21st and the 22nd, right in time for the autumnal equinox. October is looking like a big great celebration.

Until then:

Focus. Envision. Take Action— Trust.

Hang tight Butisattvas, we’re going to come out of this on top.

A Grain + Dairy Free Recipe:

Lemon Coconut Birthday Cake

Due to some food sensitivities, our family decided to go Paleo earlier this year.  We had been considering it for a while, but it was hard to make the commitment to go grain and dairy free in particular.

The reason this was especially hard for us is because baking is a part of our lives.  My oldest daughter and I have baked together for every special occasion for years and it is a hobby that we have always enjoyed.

We like to do big, complicated desserts from scratch and it seemed impossible to make them to our standards while staying grain and dairy free.  My favorite thing to bake has always been layer cakes.

I love the look of a really tall round layer cake, something about it just takes me back to my childhood and how special it felt to have something made just for me.

When my youngest daughter’s birthday came up and she asked for a lemon cake, I thought about going back to my tried and true recipe but hated the idea of having a cake that not everyone in the family could eat.

I am happy to report that the recipe below more then fulfilled our expectations.  Not only did it look amazing, it also tasted like heaven.  It is grain free, dairy free, and refined sugar free.

Although I am OK with a little bit of refined sugar for special occasions, I thought the honey was a perfect pairing with the tart lemon.

This cake itself is not too sweet and subtly lemony, the addition of the tart lemon curd and rich coconut cream with fresh berries really elevates the cake to sublime.

I made everything the night before and assembled the day of the party.

We may have eaten the leftover slices for breakfast the next day.

Editors Note: This cake is quite large (4 layers)! If you would like a smaller cake, just cut all ingredients in half and bake one 8” pan instead to make a 2 layer cake.

This recipe was inspired by this blog post.

Lemon Pound Cake
2 cup coconut flour, sifted (200g)
16 eggs
1 3/4 cups plain coconut yogurt
12 tbsp butter
1/2-3/4 cup raw honey
1.5 tbsp vanilla extract
6-8 tbsp lemon juice
1 tbsp lemon zest
2 tsp baking soda
1/2 tsp sea salt
½ tsp Cream of Tartar

Honey Sweetened Lemon Curd
16 tablespoons butter
1/3 cup raw honey
10 egg yolks
1 cup lemon juice (fresh squeezed preferred)
dash of sea salt

14 oz can Coconut cream
1-2tbsp honey
1 tsp vanilla
1.5-2 pounds fresh berries of your choice

Lemon Cake:

1. Grease two 8” cake pans and line bottoms with parchment paper, grease
parchment paper – I like to use ghee, coconut oil and regular butter are also
fine.  Preheat oven to 350F.

2. Sift together coconut flour, baking soda & salt.  Add lemon zest and mix.

3. Using a stand mixer – cream together butter and ½ cup honey.

4. Take six eggs and separate yolks from whites.  Set egg whites aside.

5. Add yolks and vanilla to creamed butter and honey and mix well.

6. In separate bowl mix together remaining eggs, yogurt, and 6 Tbsp lemon

7. Put stand mixture on low and add flour mixture alternating with egg mixture,
begin and end with flour mixture. Scrape down bowl then mix on high for a
minute to let the coconut flour absorb the liquid.

8. At this point the mixture should have a liquid batter consistency, if it looks very thick and stiff, the coconut flour has absorbed too much liquid.  Add reserved lemon juice and/or honey until a thinner consistency is reached. You can also use a little extra yogurt if needed.

9. Beat reserved egg whites with cream of tartar until soft peaks have formed (I do this by hand because I like the challenge, you can also use a hand mixer)  Do not overbeat.

10. Fold egg whites into cake batter gently but thoroughly.  You want them incorporated completely, but don’t overmix, the egg whites will help the cake rise and be a little fluffier.

11. Divide batter among the prepared cake pans and bake for 40-45 minutes.  The top of the cake should spring back when touched gently.

12. Set on cooling rack for about 30 minutes, then invert pans gently onto rack to cool completely.

13. You can assemble the cake once they have cooled completely or wrap each cake individually in plastic wrap and let sit overnight.

Lemon Curd:

1. In double boiler or cast iron saucepan over low heat, melt butter.

2. Whisk together egg yolks, honey and salt until smooth in separate bowl.

3. Temper yolk mixture by adding hot butter while whisking constantly.

4. Add entire mixture back to hot pan and continue stirring constantly while heating until curd begins to thicken to a pudding and starts to steam.  Be very careful that it does not simmer or burn.

5. Remove from heat and transfer to clean bowl to allow it to cool for about 15-20 minutes.  Once it has cooled, use saran wrap to cover the entire surface of the lemon curd – it must be touching the surface to prevent a skim from forming.  Put curd in fridge to firm up for at least 4 hours or overnight.

Coconut Cream:

1. Chill can of cream in the fridge the night before whipping. Chill beaters and bowl about 10 minutes before whipping.

2. Carefully scrape hardened cream into chilled bowl, leaving any liquid in the can.  I love using Trader Joes because it is all cream and you don’t have to worry about the liquid.

3. Whip cream for about 30 seconds, add in vanilla and honey to taste.  Whip until smooth and creamy.

4. You can use immediately or put it back in the fridge, it will harden and set.  I then give it a quick whisk right before using.

1. Carefully slice both cakes into 2 layers using a sharp knife.  I like to go around the edges slowly then slice through the middle in order to get the cut as even as possible.

2. Remove lemon curd and coconut cream from fridge and give both a quick whisk.

3. Set the bottom layer on your cake plate.  At this point you are going to want to work quickly as the curd and whipped cream will loosen up as they warm.

4. Spread ¼ of the lemon curd over the bottom layer, staying about ½ inch from the edge.  Plop ¼ of the coconut cream on top and spread it over the curd.  Gently place about ¼ of your berries on top of the cream.

5. Place the second layer on top of the first and repeat as above.

6. Repeat for third and fourth layer.  Heap as many berries as you can on top of the final layer to make it look fresh and pretty.

7. Place cake immediately in fridge so the lemon curd and coconut cream can firm back up.  Make sure to serve the same day.

8. Lick bowls from lemon curd and coconut cream clean while waiting for cake.

What Stimulates Your Creativity?

Two things stimulate my creativity: Buti Yoga and relaxation out in the sun. Buti Yoga balances my body and quiets any mind chatter that hinders my ability to see my future path. After an amazing workout, I feel rejuvenated and full of ideas and how to implement these ideas into business strategy or product development. Relaxation in the sun helps me with critical thinking and personal development methods. When I'm giving my body the time it needs to replenish, I get flooded with information and avenues to put these ideas into practice in my business. There's one catch - I don't stop relaxing to write down the ideas. I acknowledge them and allow them to come back to me if they are meant to be expanded upon once I'm back at the office.

When Do You Feel Your Best?

I feel my best when I've helped a client achieve a personal breakthrough - whether it's weight loss or bringing a brand identity to life - helping other people realize their goals makes me feel the most successful and content.

Do You Have a Favorite Childhood Memory?

My favorite childhood memory is getting my first front tuck in gymnastics. I developed much faster than the other girls and my coaches used to treat me like "the fat kid." They'd say mean things behind my back about my leotard and my development and it totally crushed my spirit. One day I asked my coach if I could try my front tuck. Her response indicated that I was too heavy to land it without hurting myself. Needless to say, I nailed that shit and began competing it and smiled every time I'd beat her other "skinny" girls at competition.

What's the Best part of Being CEO of Buti?

Early on in the development of Buti Yoga, other companies tried to acquire us. Thankfully, I knew how critical it was to control our brand development at an early stage–without letting outsiders change our course. Now, we're 5 years into our business and INC. magazine just informed us we have been chosen as one of the 500 fastest growing companies in the US. I attribute that to staying the course and caring about our brand culture, community and identity above and beyond profits or scale at an early age. I made that decision among opposition from my advisors. It's victories like this that make me really proud to be our company's CEO. It's not the most luxurious job and it's very challenging with kids BUT I am eternally grateful that I get to see my hard work pay off with women's transformations across the globe.

A Story of Transformation:

Investing in YOU: Taking the RYT Plunge

I found BUTI Yoga after reading about it in Shape magazine. I started a Buti DVD with the goal of losing weight & gaining some muscle tone.

I was an uncoordinated, out-of-shape mess but I loved the movement and workout.

After a few months, I started the online subscription and became on "online junkie"! I could see the physical changes but even more powerful were the emotional changes. I attended the first BUTI retreat to make real connections.

After meeting the other open, compassionate, caring, non-judging women, Master Trainers and Bizzie, I came home wanting to teach Buti and get certified.

I have had a lot of goals in my life. Certified Yoga Instructor was not one of them.

But when you find a yoga practice that makes your body, heart, mind and soul dance—how can you not want to share it?

When you find a yoga practice that supports all women; that doesn't expect these cookie cutter bodies and attitudes to become instructors or to be part of their tribe—how can you not want to share it?

When you find a practice that allows you to "do you" once you're certified—how can you not want to share it?

I wanted to share BUTI, to teach BUTI, to connect women back to their hearts & bodies and back to one another!

To become certified did not become just another goal to check off the list—it came from my heart.

I signed up for the Nashville RYT program to begin my journey in sharing this practice with integrity, more knowledge and a deeper understanding of yoga. Yes, it was a huge time and financial commitment.

The 1st unit of the RYT program gave me knowledge about the history of yoga, understanding different types of yoga, anatomy, sanskrit and learning to teach. That was the first layer—but each month (unit) it gets deeper! YOU become the work and the study. I received tools to release & heal the emotional crap that was holding me back.

This program taught me how to heal from learning about and healing my chakras. I received so much support, love and acceptance from every woman in the class. We created bonds that we’ll have for a lifetime! RYT helped me to get clear on my direction, not just professionally but personally, too.

When you heal, get direction and gain support you become a leader—not only ready to teach but to bring it all into life!

That is what I get to carry with me each day because I took the leap! I get to help other women heal; that is so huge. That is what we are here for, right—to heal, love & share!!

If you think that RYT just means "registered yoga teacher" and a certificate on the wall we aren’t talking about the same program! This RYT means confidence, tools, knowledge, support and friendships for life.

This just isn't a professional investment, it is an investment in yourself. I've spent a lot more money than the cost of this program on clothes, shoes, getting my hair done—an endless list of "things" that made me look good on the outside.

This investment will make you look and feel good on the inside so that you can connect and teach other women to do the same and that is so worth it!

As always, a huge thanks to Bizzie and my other Nashville RYT girls, all of you keep my heart full!!

Buti Yoga Healthy Recipes:

Asparagus helps to reduce inflammation in the body. This veggie is super high in essential minerals such as selenium, zinc and manganese which are vital for a strong and healthy immune system. High in vitamins A, K, B-complex and folate, these green stalks don't take much to prepare.

Here's a simple and delicious recipe that you can whip up in no time!

Preheat your oven to 425 F. Then, on a foil lined baking sheet spread out one bunch of washed and trimmed asparagus, drizzle 1 tablespoon of extra virgin olive oil over top and toss them to coat. Season to taste with some sea salt and black pepper and bake for 10-15 minutes until tender.

Once they come out of the oven you can sprinkle with lemon zest and freshly squeezed lemon juice just before serving. It really is the perfect spring side dish! Feel free to add some red pepper flakes if you like things more spicy. Psst...we got my two year old to eat them by telling him they were green French fries! Hey, whatever works right mamas?

Optional: Crush a handful of grain free crackers or breadcrumbs (we love Absolutely Gluten Free crackers) and sprinkle the asparagus with a handful of crushed crumbs before baking.

TIP: Save your asparagus and keep those lovely green stalks fresher longer with this easy trick! Put your asparagus in a shallow bowl, ensuring the stems are covered in about 1-2 inches of cold water and place the bowl in the refrigerator and be sure to change the water every other day. Your asparagus will last twice as long.

My name is Gina Maida and I live in Staten Island, New York with my husband Joseph and our 2 1/2 year old son Leonardo. I am forever grateful that I was able to become a stay at home mom when my son was born....because I know that is what ultimately led me to Buti Yoga. I found my souls true purpose...my passion in life. I was encouraged and motivated by my Buti Yoga instructor, Katherine Hamby to become certified and teach. I am so proud and happy to say I am now certified in Buti Yoga levels 1 + 2 and Hot Buti Yoga. My yoga journey has truly helped me connect me to a more spiritual side of life....one that I didn't even tap into before. Yoga has helped me become a better mom, wife and friend. I have learned to be more confident, patient and breath through any challenges life throws at me. We are yogis...we bend so we don't break.
